Herbie Potatoes

I saw something similar to this somewhere... can't remember where nor could I remember the exact recipe (no surprises there)... so I basically made up my own recipe and well I think its a winner.


Great tasting, easy and budget conscious, what more could I ask for... oh and the kids LOVE IT.


Peel potatoes (though you could also leave them unpeeled, just my fussy family doesn't like the skin on) and then dice into cubes about 3/4".
Cover oven trays with foil (for easy clean up)
Spray foiled trays with non-stick spray
Evenly spread potato cubes out over tray
Lightly cover with oil (any kind)
Sprinkle with herbs - whatever takes your fancy
I use Italian herb mix, Tuscan herb mix, Vegetable stock, Flavoured salt (or a mix of any of these)
Put into a hot oven about 180 - 200C depending upon how hungry you are
Stir/turn over part way through cooking process. Should take about 40 minutes to cook but this may vary based upon temperature and your oven
When potatoes feel soft, sprinkle with grated cheese - any kind but I like Edam and grill until cheese melts
Serve while hot with almost anything
