Revisit and revamp...

Oops its been over a year since I last posted here. Good thing this is just my other blog and not my real one, if you know what I mean.


I've been inspired by some of my family and friends to step out of my comfort zone, take control and just do something instead of remaining in the status quo indefinitely.
I had talked myself into putting it off until the New Year, I'm just too busy, too many things to think about, trying to find a job, Christmas coming up, taxes to sort out... but let's get real. The time to take action is NOW.
No more procrastinating!
No more excuses!
Just take damned control girl!
So I did.
Not saying I won't make mistakes.
Not saying I won't screw up and fall off the wagon.
Not saying I'm going to be perfect.
But doing something is better than just thinking about it but doing nothing!

Herbie Potatoes

I saw something similar to this somewhere... can't remember where nor could I remember the exact recipe (no surprises there)... so I basically made up my own recipe and well I think its a winner.


Great tasting, easy and budget conscious, what more could I ask for... oh and the kids LOVE IT.


Peel potatoes (though you could also leave them unpeeled, just my fussy family doesn't like the skin on) and then dice into cubes about 3/4".
Cover oven trays with foil (for easy clean up)
Spray foiled trays with non-stick spray
Evenly spread potato cubes out over tray
Lightly cover with oil (any kind)
Sprinkle with herbs - whatever takes your fancy
I use Italian herb mix, Tuscan herb mix, Vegetable stock, Flavoured salt (or a mix of any of these)
Put into a hot oven about 180 - 200C depending upon how hungry you are
Stir/turn over part way through cooking process. Should take about 40 minutes to cook but this may vary based upon temperature and your oven
When potatoes feel soft, sprinkle with grated cheese - any kind but I like Edam and grill until cheese melts
Serve while hot with almost anything

Ohhhh that's so cute moment...

I had one of those moments yesterday afternoon when I had to smile and I wished I had my camera but I didn't and even if I did I couldn't have done anything as I was involved.
My step-daughter's friend came over yesterday to borrow some DVD's for a girl's night in. She also brought her adorable baby boy, Ayson, who is about 12 weeks old now. He was born the day after my nephew so Ayson is my substitute nephew for cuddles.
Anyway... I was having my cuddles with him, he is still so cute and new lol. I went inside with him to give him back to his mummy. As I walked into the lounge my granddaughter, Sonia, who is nearly 18 months looked at me carrying another baby and suddenly got all jealous and wanted to be picked up herself. 
I managed to crouch down with baby in one arm and pick her up one armed so I had one on each hip. (That sounds so much easier than it was in reality.) Then I went and sat on the couch with one on each knee.
If you thought that was cute... keep reading...
Next thing I know Sonia leans forward and gives Ayson a big hug before kissing him on the mouth. It was just so cute!!! She is so going to be like her mother, late maternal grandmother and great grandmother and have a younger man lol.


Note to self... make sure I take the camera with me next time!!

It's been a while

Yes it's been a while since I visited the blog... far too long in fact but I have had many a good excuse for my absence.


It started with my Dad being diagnosed with bowel cancer. This came as somewhat of a shock for the family. He had been cancer free for a couple of years after a dice with Non-Hodgekins Lymphoma and a very nasty bout of septicemia the result of which was the loss of several finger-tips.


He went in for surgery so I flew down to Christchurch after he returned home to help him & mum during the recovery process. The first weekend was busy with my sister and her family, including her three-week old baby boy and two other toddlers also there to help out.


My two and a half week visit was extended when mum ended up in hospital as well with a bout of pneumonia. When she finally managed to escape I stayed a few more days before finally flying back home to Auckland nearly a month after I departed.


The week I got home, my mother-in-law, who lives with us, went into hospital for surgery on her back. Some 2 weeks later, and her bout with pneumonia, she  came home with a walker, crutches and other additional pieces of furniture.


Less than two weeks after that, I found myself once again trolling the corridors of hospitals, this time with my step-children's maternal grandfather. Unfortunately this time the news was not quite as good as he was diagnosed with an aggressive and inoperable brain tumor. As he is divorced and only has our kids as his only family, it has fallen on my shoulders to be his rock during this time. 


In the past three months I've spent more than my share of time in hospital visiting, talking to Doctors, wandering the corridors, discussing treatment options and contemplating the uncertain future of someone else's life.


The only thing I can say is thank goodness I haven't had a job during this period so I have been able to give the people in my life the time they have needed, wanted and deserved to help them through these life changing moments.

Noisy Neighbours

It's 12.39am on Friday morning and yes I'm still up. I'm a night owl as anyone who knows me well will attest to. And so it seems are the next door neighbours.


I know this because I'm sitting here at my laptop listening to the music they are playing in their garage with the door fully open whilst drinking with friends. Why you might say am I listening to their music... basically because I have no choice... it's that LOUD!!!! (I'm not playing my Ipod because I would have to have it up too loud to drown out their music.)


Now I really don't mind a good party. I don't even mind loud music (though to be honest the third time in a row that they played John Rowles singing "Cheryl Moana Marie" was perhaps a bit much); what I really object to is the fact that it is obnoxiously loud for this hour on a week night when most people have to get up early for work the next morning.


Some people may think I may be being unreasonable but I really don't think so.


So turn down the music before I ring noise control. Show some consideration for the rest of the neighbourhood.


Now where did I put my ear plugs???

Recipe Challenge 1

Ok so I'm a few weeks behind on the recipe challenge of Glenna's. It's just that trying to convince my family to try anything new is a mission in itself. Tonight they had no choice they just got something new.

Bit of a mixed reaction, Kurt loved it, Alysha wouldn't even try it and Pete just complained it was a bit late being served.

It started out as "Potatoe Rosti" then became "Root Vegetable Rosti" and ended up being "Whatever Vegetables I Had in the Fridge that Would Grate Easily Rosti".

I definitely prepared too much so it took way longer to cook and then at the last minute I added grated cheese which just finished it.

I forgot to take a picture of the before, but here are the leftovers lol...
